ETHÈRIC RANGE

Ethéric is born from the Finca dels Quadrons, one of the few plots with a north orientation and on terraces surrounded by forest, a unique estate from Carinyena Negra shown in two colors, a red wine and a blanc de noirs. The latter is also blended with the skins of the few Carinyena Blanca plants that we find mixed in this 90-year-old vineyard.

ETHÈRIC – BLACK CARIGNAN 2019

Elegance, silkiness and balance.

It comes from a 90-year-old vineyard, the Quadrons. A plot located in Capmany of sandy granitic terrain, formed by terraces and surrounded by a pine forest making it look like an amphitheater. Following the principles of Biodynamics, the harvest is done manually, taking the utmost care of the grapes.

Fermented in open French oak casks with its own lees and then aged for 12 months in Austrian barrels.

TASTING NOTE

Medium body cherry color

Aromatically predominates a freshness of red fruit, notes of violet flower and citrus orange peel.

In the mouth we perceive fluidity, balance and silkiness, but also volume that is accompanied by a constant acidity and a deep and long finish.

ETHÈRIC – BLANC DE NOIRS 2021

Delicacy, sensuality and elegance.

From the same Finca les Quadrons we present the Ethèric Blanc de Noirs. From the few strains of white Carinyena we find there, we make this very special brisat. Following the principles of Biodynamics, the harvest is done manually, taking the utmost care of the grapes.

With a very gentle pressing, we extract the first must from Carinyena Negre. Later, in a stainless steel tank, it ferments for eight months together with the lees of Carinyena Blanca, applying the battonage technique. It will then spend two years in bottle aging.

TASTING NOTE

Straw yellow color with ocher notes.

Aromatically, we are talking about white flowers, passion fruit, lemon peel. If we let it express itself, notes of fruit such as apricot appear.

In the mouth we perceive a citric acidity, freshness, minerality caused by the work of lees, a long aftertaste salty, silky and balanced.

ESSÈNCIA sweet

The passion for wines leads us to want to recover techniques for making sweet wines from Emporda.

We pick Carinyena Blanca and Grenache Roja at their optimal point of maturation and then stretch it on a bed of dry straw to dehydrate and generate a point of botrytis.

Then we press and let the free run juice start to ferment with the autochthonous and spontaneous yeast.

Once started, we boil part of the juice and reduce it until we obtain a caramel that we will later use to add it back to the fermenting must, and in this way stop the fermentation of the yeasts due to excess sugar and fatigue.

TASTING NOTE

Amber color

Aromatically we find orange peel, nuts such as almonds, also notes of caramel and honey.

In the mouth we have volume and sweetness with a fresh finish marked by acidity..
