Manual harvest in 10kg boxes, making a first selection of grapes in the vineyard and a second grain by grain in the cellar. Cold pre-maceration (2-4ºC) followed by controlled fermentation at a temperature of 26-28ºc.
We combine pumping over and pigage to extract the personality of the variety. Long maceration and low pressure pressing. Aging for 21 months in 1,500 liter Rousseau barrels with lees removal and malolactic fermentation.
Cherry color with violet reflections.
Intense expression of black fruit like blackberry and plum, balsamic notes reminiscent of eucalyptus,
and subtle touches of dark chocolate and graphite that emerge as it progresses.
Fresh and acidic entry on the palate, with a velvety, indulgent, and structured texture. Displaying the distinctive minerality of its terroir, the slate, as it passes through.
