Manual harvest in 10 Kg boxes, carrying out a first selection in the vineyard and a second grain by grain in the cellar.
Cold pre-maceration (4ºC) with subsequent vinification in stainless steel vats and French oak foudres. Pressed at very low pressure.
Aging for 14 months in bordeaux barrels of French and Austrian oak, combining fine and extra fine grain to obtain more complexity.
Intense cherry color.
A complex symphony of floral aromas of violet, giving way to an explosion of black fruit like blueberry and plum, accompanied by toffee and vanilla, a result of its ageing process.
Depth and elegance are displayed through silky tannins that culminate in a long and fresh finish on the palate.
Stewed meats such as beef with mushrooms, chicken with squid or extending it to chocolate desserts.
