After fermentation, the red wines rest for between 10 and 14 months in French and Austrian oak barrels, and then rest in the bottle until the desired balance is achieved. The range of Vd’O wines – varietal terroir wines – rest in these barrels, thus reflecting the uniqueness of each plot. In the room we also have the stoneware egg, where the Ethèric Blanc de Noirs wine evolves for a year, extracting the maximum expression of both the variety and its aging.
We like to work with different coopers, as each one offers unique characteristics that influence the evolution of the wine. The origin of the wood, the grain, the type of toasting or even the shape of the barrel all contribute different nuances and textures.
For this reason, we carefully choose which wine goes with each type of barrel, always looking for the most suitable combination for each variety and style.

Tonnellerie Ermitage A French cooperage renowned for its use of fine-grained oak from sustainably managed forests. It stands out for its steam pre-toasting technique, which allows for elegant wines with fine aromas and a very smooth integration of the wood.
